Soup is always a quick “Go To” meal for me. My reason is that it takes a little over 30 minutes to prepare and it’s something warm as opposed to a salad or sandwich. Also, you get to use a variety of vegetables all stewed in one pot. For this soup I have broccoli, carrots, green beans, corn, spinach, water chestnuts, green onions and more. To make the soup even more scrumptious and filling I added quinoa and barley. Gotta get in those healthy grains.
Ingredients:
- 1 quart vegetable or chicken stock
- 2 cups water
- 3/4 cup quinoa
- 1/2 cup barley
- 2 -3 green onions, chopped
- 1 bag of Deluxe stir fry (it’s more than for stir fry)
- 1 cup Classic mixed vegetables
- 1 – 2 cups of spinach
- 1 spring of fresh Rosemary
- Oregano
- Salt to taste
- Red Pepper
Directions:
In a saucepan, add 2 cups of water and bring to a boil. Add quinoa and cook for about 10 minutes.
Reduce to low heat. Add remaining ingredients, cover with lid and simmer for 15-20 minutes.
Makes 6-8 servings
